  • 8 oz spaghetti
  • 8 oz burrata cheese
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil (divided)
  • 3 cloves garlic (minced)
  • 1/4 tsp red pepper flakes
  • 1/2 cup low-sodium vegetable broth
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Boil salted water in a large pot. Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
  2. Preheat oven to 400°F (200°C). Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for about 20 minutes until they burst.
  3. In a skillet, heat remaining olive oil over medium heat. Add minced garlic and sauté for about one minute until fragrant.
  4. Pour vegetable broth into the skillet and simmer for 5 minutes. Stir in red pepper flakes, adjusting seasoning with salt and pepper. Add reserved pasta water if needed.
  5. Mix cooked spaghetti with roasted tomatoes and torn basil in the skillet until well combined.
  6. Plate the pasta and generously top each serving with burrata cheese, allowing it to melt slightly. Drizzle with olive oil before enjoying.
