- 8 oz burrata cheese
- 1 cup cherry tomatoes
- 2 tbsp olive oil (divided)
- 3 cloves garlic (minced)
- 1/4 tsp red pepper flakes
- 1/2 cup low-sodium vegetable broth
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Boil salted water in a large pot. Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
- Preheat oven to 400°F (200°C). Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for about 20 minutes until they burst.
- In a skillet, heat remaining olive oil over medium heat. Add minced garlic and sauté for about one minute until fragrant.
- Pour vegetable broth into the skillet and simmer for 5 minutes. Stir in red pepper flakes, adjusting seasoning with salt and pepper. Add reserved pasta water if needed.
- Mix cooked spaghetti with roasted tomatoes and torn basil in the skillet until well combined.
- Plate the pasta and generously top each serving with burrata cheese, allowing it to melt slightly. Drizzle with olive oil before enjoying.
