  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese
  • 1 cup Velveeta cheese
  • 2 tbsp olive oil
  • 1 tbsp butter (for searing)
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 4 cloves garlic, finely minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook rotini pasta in salted boiling water until al dente, about 10-11 minutes. Drain and set aside.
  2. In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun seasoning and sear for about 6-8 minutes until golden brown. Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic. Add heavy cream and milk; whisk in cream cheese until smooth.
  4. Stir in Velveeta until melted, then add mozzarella and Parmesan cheese.
  5. Combine cooked rotini with the sauce and chicken. Toss until well coated.
