  • 300g rotini pasta
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper

Instructions

  1. In a large pot, bring water to a boil and cook the rotini pasta according to package directions. Add broccoli florets during the last 3 minutes of cooking. Drain and set aside.
  2. In a large pan over medium heat, add olive oil and sauté diced chicken until golden brown.
  3. Stir in minced garlic and cook for about 1 minute, then add heavy cream and chicken broth. Bring to a simmer.
  4. Mix in grated Parmesan cheese along with salt and pepper to taste. Allow sauce to thicken slightly.
  5. Combine the drained pasta and broccoli with the creamy sauce, tossing well to coat before serving.
