- 300g rotini pasta
- 2 chicken breasts, diced
- 2 cups broccoli florets
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- Salt and pepper
Instructions
- In a large pot, bring water to a boil and cook the rotini pasta according to package directions. Add broccoli florets during the last 3 minutes of cooking. Drain and set aside.
- In a large pan over medium heat, add olive oil and sauté diced chicken until golden brown.
- Stir in minced garlic and cook for about 1 minute, then add heavy cream and chicken broth. Bring to a simmer.
- Mix in grated Parmesan cheese along with salt and pepper to taste. Allow sauce to thicken slightly.
