Ingredients
- 2 lbs beef chuck
- 1 tbsp oil, vegetable or coconut
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp red curry paste
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 tsp chili flakes
- 1 can (14 oz) full-fat coconut milk
- 1 cup beef broth
- Salt and pepper, to taste
- Juice of 1 lime
Instructions
- Heat oil in a cast iron pot over medium heat. Brown the cubed beef on all sides for about 5-7 minutes. Remove and set aside.
- In the same pot, sauté chopped onion until translucent (3-4 minutes). Add minced garlic and grated ginger; cook for an additional minute.
- Stir in red curry paste, ground cumin, turmeric, and chili flakes for about 2 minutes.
- Return beef to the pot; pour in coconut milk and broth. Season with salt and pepper; bring to a gentle simmer.
- Cover and reduce heat to low. Cook for 2-3 hours until beef is tender, stirring occasionally.
- Squeeze lime juice over the curry before serving.
