- 1 lb (450 g) baby potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon butter
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss halved baby potatoes with olive oil, salt, and pepper until well-coated. Spread them in a single layer on the baking sheet.
- Roast the potatoes for 25–30 minutes until tender and golden brown, turning halfway through.
- While the potatoes roast, melt butter in a skillet over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant.
- Stir in heavy cream and simmer for 3–4 minutes until slightly thickened.
- Remove from heat and blend in grated Parmesan cheese until melted and smooth.
- Once roasted, transfer potatoes to a serving dish and pour the creamy sauce over them. Garnish with chopped parsley before serving.
