  • 3 boneless, skinless chicken breasts (1.5 lbs)
  • 12 oz fusilli pasta
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Reserved pasta water (as needed)

Instructions

  1. In a large pot of salted boiling water, cook fusilli according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until golden brown. Remove from skillet and let rest.
  3. In the same skillet, add minced garlic and sauté until fragrant (about 1 minute). Stir in heavy cream and chicken broth until well combined.
  4. Slice cooked chicken and return it to the skillet with the sauce. Stir in grated Parmesan cheese until melted and creamy.
  5. Toss in drained fusilli along with reserved pasta water as needed to achieve desired sauciness.
  6. Plate the dish and garnish with extra Parmesan if desired.
