  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • 1 cup pineapple, cubed
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown and fully cooked through (about 6-8 minutes). Remove the chicken and set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened (about 5 minutes). Stir in cubed pineapple and cook for an additional 2 minutes.
  3. Add jasmine rice, chicken broth, soy sauce, and grated ginger to the skillet. Season with salt and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is tender and liquid is absorbed.
  5. Return cooked chicken to the skillet, stir to combine flavors. Serve garnished with green onions and sesame seeds.
