Ingredients

  • 32 oz ricotta cheese
  • 2 large eggs
  • 48 oz marinara sauce
  • 12 oz gluten-free penne pasta
  • 16 oz shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 1/4 teaspoon pepper

Instructions

  1. Spray the slow cooker insert with non-stick spray.
  2. In a bowl, mix ricotta cheese, eggs, parmesan, basil, salt, and pepper until smooth.
  3. Cover the bottom of the cooker with marinara sauce. Layer half of the pasta, followed by scoops of the ricotta mixture and mozzarella cheese.
  4. Repeat layers with remaining ingredients: sauce, pasta, ricotta mix, and mozzarella.
  5. Finish with a layer of marinara and sprinkle with remaining mozzarella and parmesan.
  6. Cook on high for 2.5 hours until heated through.
  7. Let rest for 10 minutes before serving.
