  • 2 yellow onions, chopped
  • 2 poblano peppers, chopped
  • 1 can crushed fire-roasted tomatoes (28 oz)
  • 1 can diced green chilies (4 oz)
  • 6 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 23 cups chicken or beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 3 tablespoons salted butter
  • 2 bay leaves
  • Salt to taste
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt, for serving

Instructions

  1. Chop onions and poblanos; measure out spices.
  2. Brown the ground beef in a skillet (optional) and add to the crockpot.
  3. Combine all ingredients in the crockpot: meat, vegetables, tomatoes, chilies, cheese, broth, spices.
  4. Cook on low for about 120 minutes. Stir occasionally if possible.
  5. Stir in cream cheese until melted; then mix in cheddar cheese until incorporated.
  6. Serve hot with desired toppings like cilantro and avocado.
