Ingredients
- 2 pounds ground beef (or ground chicken/turkey)
- 2 yellow onions, chopped
- 2 poblano peppers, chopped
- 1 can crushed fire-roasted tomatoes (28 oz)
- 1 can diced green chilies (4 oz)
- 6 ounces cream cheese
- 2 cups shredded cheddar cheese
- 2–3 cups chicken or beef broth
- 2 tablespoons chili powder
- 1 tablespoon garlic powder
- 1 tablespoon smoked paprika
- 2 teaspoons ground cumin
- 1/2 teaspoon cayenne pepper
- 3 tablespoons salted butter
- 2 bay leaves
- Salt to taste
- 1 can mixed chili beans, drained
- 1/2 cup fresh cilantro, chopped
- 1/4 cup chopped green onions
- Avocado and Greek yogurt, for serving
Instructions
- Chop onions and poblanos; measure out spices.
- Brown the ground beef in a skillet (optional) and add to the crockpot.
- Combine all ingredients in the crockpot: meat, vegetables, tomatoes, chilies, cheese, broth, spices.
- Cook on low for about 120 minutes. Stir occasionally if possible.
- Stir in cream cheese until melted; then mix in cheddar cheese until incorporated.
- Serve hot with desired toppings like cilantro and avocado.
