  • 5 eggs (beaten)

Instructions

  1. Activate the yeast by mixing warm milk with active dry yeast and allowing it to sit until frothy (about 5-10 minutes).
  2. In a large mixing bowl, combine flour, sugar, and salt; pour in the yeast mixture and mix until a dough forms.
  3. Knead the dough on a floured surface until smooth and elastic (8-10 minutes).
  4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  5. Prepare the cold butter by pounding it into a flat rectangle between parchment paper; chill if necessary.
  6. Roll out chilled dough into a rectangle; place the butter layer in the center, fold like an envelope, roll out again, and fold twice more for optimal layering.
  7. Cut rolled dough into triangles and roll from base to tip to shape croissants.
  8. Place on a parchment-lined baking sheet; let rise until doubled in size (1-2 hours).
  9. Preheat the oven to 400°F (200°C), brush croissants with beaten egg wash, and bake for 15-20 minutes until golden brown.
