- 25 g white sugar
- 5 g salt
- 5 g yeast
- 70 g milk
- 70 g water
- 150 g unsalted butter (divided)
- 400 g white sugar (for coating)

- Prepare the butter layer by rolling out 125 g of cold unsalted butter into a square and refrigerating it until firm.
- In a mixing bowl, combine flour, sugar, yeast, and salt. Add milk, water, and the remaining unsalted butter; mix on low speed until combined.
- Form dough into a ball and refrigerate overnight.
- Roll out dough into a rectangle, place the chilled butter in the center, fold over sides, then roll out again.
- Perform single folds every hour for two hours.
- Cut dough into strips and chill for 20 minutes.
- Assemble cruffins by rolling two strips together and placing them in a greased muffin tin.
- Allow to rise for 2-3 hours until tripled in size.
- Bake at 356°F for about 20 minutes until golden brown.
- Cool slightly before rolling in sugar.
