  • 25 g white sugar
  • 5 g salt
  • 5 g yeast
  • 70 g milk
  • 70 g water
  • 150 g unsalted butter (divided)
  • 400 g white sugar (for coating)

Instructions

  1. Prepare the butter layer by rolling out 125 g of cold unsalted butter into a square and refrigerating it until firm.
  2. In a mixing bowl, combine flour, sugar, yeast, and salt. Add milk, water, and the remaining unsalted butter; mix on low speed until combined.
  3. Form dough into a ball and refrigerate overnight.
  4. Roll out dough into a rectangle, place the chilled butter in the center, fold over sides, then roll out again.
  5. Perform single folds every hour for two hours.
  6. Cut dough into strips and chill for 20 minutes.
  7. Assemble cruffins by rolling two strips together and placing them in a greased muffin tin.
  8. Allow to rise for 2-3 hours until tripled in size.
  9. Bake at 356°F for about 20 minutes until golden brown.
  10. Cool slightly before rolling in sugar.
