  • 2 T. real maple syrup
  • 2 T. red apple vinegar
  • Sea salt and black pepper (to taste)
  • 2 T. extra-virgin olive oil
  • 1/4 c. pecans (roughly chopped, divided)
  • 6 sliced large celery stalks (preferably organic)
  • Celery leaves (from stalks, roughly chopped)
  • 1 large red sweet apple (chopped)
  • 1/4 c. dried cranberries

Instructions

  1. In a salad shaker, combine Dijon mustard, maple syrup, red apple vinegar, salt, pepper, and olive oil. Shake well.
  2. Toast chopped pecans in a small dry skillet over medium heat until fragrant; set aside.
  3. In a large bowl, mix sliced celery, chopped apples, celery leaves, dried cranberries, and three tablespoons of toasted pecans. Season with salt and pepper.
