  • 8 skinless chicken thighs
  • 1 garlic clove
  • 400ml coconut milk
  • 2 tablespoons Thai yellow curry paste
  • 500g cooked rice
  • Fresh coriander leaves
  • Salt
  • Black pepper
  • Olive oil (for frying)
  • Water
  • Crispy fried onions
  • Chilli oil

Instructions

  1. Marinate the chicken by combining skinless thighs, grated garlic, half of the oyster sauce, salt, and black pepper in a large mixing bowl. Let it sit for at least 15 minutes.
  2. In a saucepan over medium heat, add a splash of coconut milk and then stir in chopped coriander stalks, remaining oyster sauce, and curry paste. Pour in water and remaining coconut milk; bring to a boil before simmering for 10-15 minutes.
  3. In a frying pan, heat olive oil over medium-high heat. Cook marinated chicken until charred on both sides and fully cooked (about 6-8 minutes).
  4. Serve by dividing cooked rice into bowls, ladling curry sauce on top, slicing chicken, and garnishing with crispy fried onions and fresh coriander.
