Ingredients
- 8 skinless chicken thighs
- 1 garlic clove
- 400ml coconut milk
- 2 tablespoons Thai yellow curry paste
- 500g cooked rice
- Fresh coriander leaves
- Salt
- Black pepper
- Olive oil (for frying)
- Water
- Crispy fried onions
- Chilli oil
Instructions
- Marinate the chicken by combining skinless thighs, grated garlic, half of the oyster sauce, salt, and black pepper in a large mixing bowl. Let it sit for at least 15 minutes.
- In a saucepan over medium heat, add a splash of coconut milk and then stir in chopped coriander stalks, remaining oyster sauce, and curry paste. Pour in water and remaining coconut milk; bring to a boil before simmering for 10-15 minutes.
- In a frying pan, heat olive oil over medium-high heat. Cook marinated chicken until charred on both sides and fully cooked (about 6-8 minutes).
- Serve by dividing cooked rice into bowls, ladling curry sauce on top, slicing chicken, and garnishing with crispy fried onions and fresh coriander.
