  • 2 1/4 cups bread flour
  • 3/4 cup cake flour
  • 1 tsp salt
  • 1 cup warm milk
  • 3 tbsp unsalted butter
  • 3 tbsp granulated sugar
  • 2 tsp instant yeast
  • 1 egg
  • Oil (for frying)
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 1 carrot, diced
  • 3 potatoes, peeled and cubed
  • 0.3 lbs ground beef (or turkey as an alternative)
  • 1 tbsp soy sauce
  • 1 tbsp ketchup
  • 3 cubes Japanese curry roux
  • 1 cup water
  • 1 tbsp cornstarch
  • 1 egg (beaten)
  • 1 1/2 cups panko/breadcrumbs

Instructions

  1. In a mixing bowl, combine bread flour, cake flour, salt, sugar, and instant yeast.
  2. Melt the unsalted butter and mix it with warm milk; add to the dry ingredients along with one egg. Knead until a smooth dough forms. Cover with a damp cloth and let it rise for about 90 minutes or until doubled in size.
  3. Heat vegetable oil in a skillet over medium heat. Sauté chopped onion until translucent.
  4. Add diced carrot and cubed potatoes; cook until slightly tender.
  5. Stir in ground beef (or turkey) and cook until browned.
  6. Add soy sauce, ketchup, Japanese curry roux, and water; let simmer until thickened.
  7. Divide the risen dough into equal portions.
  8. Roll each portion into a circle about ¼ inch thick.
  9. Place some curry filling in the center of each circle and fold over to seal tightly.
  10. Heat oil in a deep fryer or large pot to 350°F (175°C).
  11. Dip each sealed bun into beaten egg then coat with panko breadcrumbs.
  12. Fry each bun until golden brown on both sides; drain on paper towels before serving.
