  • 1/2 cup cold brew coffee (or strong brewed coffee)
  • 1 tablespoon lemon juice (or vinegar)
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour (optional)
  • 8 ounces chopped bittersweet chocolate (for ganache)
  • 1 cup heavy cream (for ganache)
  • 1 cup powdered sugar (optional)
  • 1 teaspoon vanilla extract (optional)

  • chocolate-covered espresso beans (for garnish)
  • 1 packet instant cheesecake pudding mix (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix crushed Oreos and melted butter; press into a springform pan and bake for 10 minutes. Let it cool.
  2. In another bowl, beat softened cream cheese until smooth, then add sugar gradually. Mix in coffee extract, eggs one at a time, heavy cream, cold brew coffee, lemon juice, salt, and flour if using.
  3. Pour filling over the cooled crust and bake for about 75-85 minutes until set around edges but slightly jiggly in center. Cool inside the oven for 30 minutes.
  4. Refrigerate for at least 4 hours or overnight. For ganache, heat heavy cream until boiling and pour over chopped chocolate; stir until smooth.
  5. Spread ganache over the chilled cheesecake and garnish with chocolate curls before serving.
