Ingredients
- 1 box Strawberry Cake Mix
- 1 cup Guava Nectar or Juice
- 3 large Eggs
- 1/2 cup Liquid Coconut Oil
- 8 oz Cream Cheese
- 1 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 8 oz Cool Whip
- 1 tbsp Cornstarch
- 1/2 cup Water
- 1/2 cup Granulated Sugar (for garnish)
- 1/2 cup Coconut Flakes (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the strawberry cake mix, guava nectar, eggs, and coconut oil. Beat until well blended.
- Pour the batter into a greased 9×13 inch baking pan and bake for about 26 minutes or until a toothpick comes out clean.
- Allow the cake to cool for about 10 minutes before transferring to a wire rack to cool completely.
- For the topping, beat cream cheese and sugar until smooth, then mix in vanilla extract and fold in Cool Whip.
