  • 1 cup Guava Nectar or Juice
  • 3 large Eggs
  • 1/2 cup Liquid Coconut Oil
  • 8 oz Cream Cheese
  • 1 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 8 oz Cool Whip
  • 1 tbsp Cornstarch
  • 1/2 cup Water
  • 1/2 cup Granulated Sugar (for garnish)
  • 1/2 cup Coconut Flakes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the strawberry cake mix, guava nectar, eggs, and coconut oil. Beat until well blended.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for about 26 minutes or until a toothpick comes out clean.
  4. Allow the cake to cool for about 10 minutes before transferring to a wire rack to cool completely.
  5. For the topping, beat cream cheese and sugar until smooth, then mix in vanilla extract and fold in Cool Whip.
  6. Once cooled, spread the topping over the cake and garnish with coconut flakes.
