  • 1/2 stalk celery, chopped
  • 1 cup chopped fresh shiitake mushrooms
  • 3 teaspoons beef bouillon granules
  • 2 teaspoons chicken stock
  • 2 quarts water

Instructions

  1. Prepare your ingredients by chopping the carrot, onion, ginger, garlic, and celery. Slice the baby portobello mushrooms and set aside some for later.
  2. In a large saucepan or stockpot, combine all chopped vegetables with chicken stock, beef bouillon granules, and water. Bring to a boil over high heat.
  3. Once boiling, cover and reduce heat to medium. Let simmer for 45 minutes to develop flavor.
  4. Optional: For a creamier texture, use an immersion blender or regular blender to blend until smooth; otherwise, skip this step for a chunky soup.
  5. While the soup simmers, slice any reserved mushrooms and place them in another pot. After 45 minutes of cooking, strain the soup into the pot with the raw mushrooms.
  6. Serve hot in small bowls garnished with freshly chopped chives.
