  • Dressing: 3 tablespoons extra virgin olive oil, 2 tablespoons freshly squeezed lime juice, 1 tablespoon red apple vinegar, 1 teaspoon honey or agave syrup, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon chili powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper

Instructions

  1. In a small bowl, whisk together olive oil, lime juice, red apple vinegar, honey or agave syrup, ground cumin, smoked paprika, chili powder, salt, and black pepper until well combined.
  2. In a large bowl, combine shredded chicken, black beans, sweet corn, cherry tomatoes, diced bell pepper, red onion, jalapeño (if using), and chopped cilantro. Toss gently to mix.
  3. Pour the dressing over the salad mixture and toss to coat evenly.
