- 8 oz. macaroni pasta
- 6 hard-boiled eggs
- 1/2 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, diced
- 2 celery ribs, chopped
- 1–2 tablespoons chopped fresh chives
- 1/2 teaspoon paprika
- Sea salt to taste
Instructions
- Cook the macaroni according to package instructions (8-10 minutes). Drain and rinse under cold water; set aside.
- Halve the hard-boiled eggs, remove yolks, and place yolks in a small bowl. Chop egg whites and add to the mixing bowl with pasta.
- Mash the yolks until smooth, then mix in Greek yogurt, mayonnaise, and Dijon mustard.
- Combine the egg yolk mixture with pasta and egg whites along with diced onion and celery; stir until well combined.
- Season with fresh chives, paprika, and sea salt. Chill for at least one hour before serving for enhanced flavors.
