Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 (20 oz) can pineapple chunks, drained (reserve juice)
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp cornstarch
- 1 cup chicken broth
- 2 cups cooked rice
- Optional: chopped green onions for garnish
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat until shimmering.
- Add chicken pieces to the skillet. Cook until browned and cooked through, about 5-7 minutes.
- Once browned, remove chicken from skillet and set aside on a plate.
- In the same skillet, add chopped onion and bell pepper. Cook until softened, around 3-4 minutes.
- In a small bowl, whisk together reserved pineapple juice, soy sauce, brown sugar, cornstarch, and chicken broth until smooth.
- Pour the sauce into the skillet with vegetables. Bring to a simmer while stirring constantly until thickened.
- Return the cooked chicken and add pineapple chunks to the skillet. Stir well to combine everything thoroughly.
