  • 7 cups Rice Krispies
  • 2 tablespoons unsalted butter (plus extra for frosting)
  • ½ cup unsalted butter (for frosting)
  • 34 cups powdered sugar
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • Green food coloring
  • Easter egg candies for decoration

Instructions

  1. Preheat your oven to 300°F (150°C). Grease cupcake pans with butter or cooking spray.
  2. In a microwave-safe bowl, combine vegan marshmallows and 2 tablespoons of butter. Microwave for about 2 minutes until melted, stirring until smooth.
  3. Stir in Rice Krispies until evenly coated.
  4. Spoon the mixture into greased cupcake pans and press down firmly using wax paper to maintain shape.
  5. Allow to cool for about 30 minutes before removing from pans.
  6. For frosting, mix remaining butter, powdered sugar, milk, vanilla extract, and green food coloring until smooth. Top cooled nests with frosting and decorate with egg candies.
