- 7 cups Rice Krispies
- 2 tablespoons unsalted butter (plus extra for frosting)
- ½ cup unsalted butter (for frosting)
- 3–4 cups powdered sugar
- ¼ cup milk
- 1 teaspoon vanilla extract
- Green food coloring
- Easter egg candies for decoration
Instructions
- Preheat your oven to 300°F (150°C). Grease cupcake pans with butter or cooking spray.
- In a microwave-safe bowl, combine vegan marshmallows and 2 tablespoons of butter. Microwave for about 2 minutes until melted, stirring until smooth.
- Stir in Rice Krispies until evenly coated.
- Spoon the mixture into greased cupcake pans and press down firmly using wax paper to maintain shape.
- Allow to cool for about 30 minutes before removing from pans.
- For frosting, mix remaining butter, powdered sugar, milk, vanilla extract, and green food coloring until smooth. Top cooled nests with frosting and decorate with egg candies.
