  • 1/4 cup (25g) cocoa powder
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup (120g) chow mein noodles
  • 1 1/2 cups (250g) milk chocolate chips
  • 1 tbsp coconut oil or vegetable shortening (optional)
  • 1/2 cup (100g) milk or dark chocolate chips
  • 1 tsp coconut oil or butter (optional)
  • Pastel candy eggs (2–4 per cookie, depending on size)
  • Colorful sprinkles or nonpareils (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, cocoa powder, and salt.
  3. In a larger bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Add in the vanilla extract and egg, mixing until smooth.
  5. Gradually add the dry mixture into the wet ingredients until a soft dough forms.
  6. Scoop about 1 tablespoon of dough and flatten each into a 2-inch disk. Place them on the baking sheet.
  7. Bake for 8–10 minutes, or until the edges are set. Allow them to cool completely.
  8. Microwave the milk chocolate chips in 30-second increments, stirring after each until smooth.
  9. Add coconut oil if needed for thinning.
  10. Place chow mein noodles in a large bowl and pour melted chocolate over them; gently toss until fully coated.
  11. Scoop about 2 tablespoons of chocolate-coated noodles onto each cooled cookie base.
  12. Shape noodles into a circular nest with a hollow center for filling.
  13. Let nests sit at room temperature for about 15 minutes to firm up.
  14. In a small bowl, microwave milk or dark chocolate chips with coconut oil until smooth; stir well.
  15. Spoon melted chocolate into each nest's hollow center until halfway filled.
  16. Gently tap each cookie on the counter to smooth out the filling.
  17. Let cool completely until hardened; refrigerate if needed.
  18. Once the chocolate has hardened, gently press 2–4 pastel candy eggs into each nest's center.
  19. For extra decoration, sprinkle colorful sprinkles around nests for a festive touch.
