  • 1 small butternut squash (peeled and chopped)
  • 2 sweet potatoes (peeled and chopped)
  • 1 yellow onion (sliced)
  • 3 cloves garlic (peeled)
  • 2 tablespoons olive oil
  • 400 ml full-fat coconut milk
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 750 ml vegetable or chicken stock

Instructions

  1. Peel and chop the butternut squash and sweet potatoes. Slice the onion and peel the garlic.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté the onion and garlic for about 5 minutes until soft.
  3. Add the chopped butternut squash and sweet potatoes to the pot; stir well.
  4. Sprinkle in cumin, cinnamon, salt, pepper, and chili powder; mix thoroughly.
  5. Pour in vegetable or chicken stock, bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes until vegetables are tender.
  6. Blend until smooth using an immersion blender or standard blender (allow steam to escape).
  7. Stir in coconut milk; adjust seasoning as needed.
  8. Serve garnished with reserved coconut milk.
