  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried Italian seasoning
  • 1 cup frozen mixed vegetables (like peas, corn, and carrots)
  • 1 can (10.5 oz) cream of mushroom soup
  • 3 cups mashed potatoes (fresh or leftover)
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional topping: 1/2 cup shredded cheddar cheese
  • Chopped parsley or green onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef. Add chopped onion and minced garlic; cook until the onion is translucent.
  3. Stir in salt, black pepper, Italian seasoning, frozen mixed vegetables, and cream of mushroom soup. Mix well and remove from heat.
  4. Spread the meat mixture into a greased 9×9-inch baking dish.
  5. In a separate bowl, combine mashed potatoes with milk, butter, shredded cheddar cheese, salt, and pepper until creamy.
  6. Spread the mashed potato mixture over the meat layer evenly.
  7. Top with additional shredded cheddar cheese if desired.
  8. Bake for 20 to 25 minutes until heated through and cheese is melted.
