- 1/2 cup Chopped Yellow Onion
- 1 Poblano Pepper (chopped)
- 2 cups Shredded Chicken
- 1 can Black Beans (15 oz; drained)
- 1/2 cup Frozen Corn
- 3 cups Chicken Broth
- 1/2 cup Heavy Cream
- 1/2 cup Shredded Cheese (Cheddar or Mexican Blend)
- Fresh Lime Juice
Instructions
- In a large saucepan or Dutch oven, melt the butter over medium heat. Sauté onions and poblano peppers with half of the seasoning blend for 5-6 minutes until tender.
- Stir in shredded chicken, black beans, corn, chicken broth, and remaining seasonings. Bring to a simmer and cook uncovered for 15 minutes.
