  • ½ yellow onion (chopped)
  • 4 garlic cloves (minced)
  • 1 large carrot (cut into 2-inch chunks)
  • 2 Yukon Gold potatoes (diced)
  • 2 cups beef broth
  • ¼ cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 2 teaspoons fresh thyme leaves (for garnish)

Instructions

  1. Preheat your oven to 325°F.
  2. Season beef chunks with salt and pepper; coat with flour.
  3. In a large Dutch oven, heat olive oil over medium heat and brown beef in batches.
  4. Sauté onion, garlic, and carrot until lightly browned.
  5. Add potatoes, beef broth, tomato paste, Worcestershire sauce, bay leaf, and thyme; scrape up browned bits from the pot.
  6. Return beef to the pot; bring to a simmer.
  7. Cover and transfer to the oven; cook for about 2 to 2.5 hours until beef is tender.
