  • 1 cup freshly squeezed lemon juice (about 56 lemons)
  • 1 Tbsp lemon zest (from about 2 lemons)
  • 1 3/4 cups sugar
  • 4 large eggs
  • 1/2 cup salted butter

Instructions

  1. Prepare a double boiler by filling a medium saucepan with 2 inches of water and bringing it to a boil.
  2. In a heatproof mixing bowl, whisk together the lemon juice, lemon zest, sugar, and eggs until combined. Add cubed butter.
  3. Place the bowl over the simmering water and whisk continuously for about 20-25 minutes until the mixture thickens and reaches 170°F.
  4. Strain the curd through a fine mesh sieve into a glass bowl to remove lumps.
  5. Cover with plastic wrap directly on top of the warm curd to prevent film formation and let cool at room temperature before refrigerating.
