Ingredients
- 2 large eggs
- 1 cup granulated sugar
- 1 cup sour cream
- 1/2 cup light olive oil
- 1 tsp vanilla extract
- 2 cups all-purpose flour

- 12 oz strawberries (hulled)
- 16 oz strawberries (hulled and halved)
- 1/4 cup granulated sugar (or to taste)
- 1 tsp powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs and granulated sugar until light and fluffy.
- Add in the sour cream, light olive oil, and vanilla extract. Mix until well combined.
- In another bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in 12 oz of hulled strawberries.
