  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 14 oz sweetened condensed milk
  • 12 oz evaporated milk
  • 1 3/4 cups heavy whipping cream
  • 1 1/2 Tbsp vanilla extract
  • 5 large eggs
  • 1/4 tsp fine sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and boil water for the water bath.
  2. In a medium saucepan, combine sugar and water to make the caramel. Cook until it turns amber, then pour into a round non-stick cake pan.
  3. Blend condensed milk, evaporated milk, cream, vanilla, eggs, and salt until smooth. Pour over the caramel in the cake pan.
  4. Place the cake pan in a roasting pan filled with hot water halfway up the sides of the cake pan. Cover with foil.
  5. Bake for 70-80 minutes or until slightly jiggly in the center. Cool at room temperature, then refrigerate for at least 6 hours or overnight before serving.
