  • 1 lb fresh salmon fillets (skinless)
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh dill, chopped
  • Zest of 1 lemon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 garlic cloves, minced
  • 2 tbsp lemon juice

Instructions

  1. Finely chop the fresh salmon fillets or pulse in a food processor until chunky. Transfer to a bowl.
  2. Add breadcrumbs, dill, lemon zest, salt, and pepper to the salmon. Mix gently to combine.
  3. Form the mixture into patties about 3 inches in diameter and place them on a parchment-lined plate.
  4. In another bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, salt, and pepper to prepare the tzatziki dressing.
  5. Heat olive oil in a skillet over medium heat or preheat your grill. Cook each patty for about 4 minutes per side until golden brown.
  6. Serve on toasted buns or lettuce wraps with tzatziki dressing and desired toppings.
