- 1¾ cups lukewarm water
- 2 teaspoons instant dry yeast
- 2 teaspoons sugar
- 4 cups all-purpose flour (or bread flour)
- 3 teaspoons salt
- 4 tablespoons extra virgin olive oil
- Optional: rosemary and flaky salt for topping

- Bloom the yeast by mixing lukewarm water, yeast, and sugar in a small bowl; let sit for 30 seconds.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture and stir until a wet dough forms. Incorporate olive oil.
- Choose between quick proofing for 1.5 to 2 hours or slow proofing in the fridge for up to 24 hours.
- After proofing, fold the dough in the bowl about 20–40 times until it tightens.
- Prepare your baking pan with olive oil or parchment paper, spread the dough into it, and allow it to proof again for about 45 minutes while preheating your oven to 450°F (230°C).
- Create dimples in the dough using your fingers dipped in a mixture of olive oil, water, and salt; optionally sprinkle with rosemary.
- Bake for 20 to 25 minutes until golden brown. Allow cooling before slicing.
