- 1 ½ cups orzo pasta
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 medium red bell pepper, diced
- ¼ cup red onion, finely chopped
- ¾ cup feta cheese, crumbled
- ½ cup Kalamata olives, pitted and sliced
- ¼ cup fresh parsley, chopped
- 3 tablespoons freshly squeezed lemon juice
- ¼ cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
Instructions
- Cook orzo in salted boiling water for about 8-10 minutes until al dente. Drain and rinse under cold water.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, olives, and parsley.
- For the dressing, whisk together lemon juice, olive oil, minced garlic, oregano, salt, and pepper in a small bowl.
- Add cooled orzo to the vegetable mix and pour the dressing over it. Toss gently to combine.
- Fold in crumbled feta cheese and adjust seasoning as needed.
- Chill for at least 20 minutes before serving.
