Ingredients

  • 1 ½ cups orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ¾ cup feta cheese, crumbled
  • ½ cup Kalamata olives, pitted and sliced
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons freshly squeezed lemon juice
  • ¼ cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook orzo in salted boiling water for about 8-10 minutes until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, olives, and parsley.
  3. For the dressing, whisk together lemon juice, olive oil, minced garlic, oregano, salt, and pepper in a small bowl.
  4. Add cooled orzo to the vegetable mix and pour the dressing over it. Toss gently to combine.
  5. Fold in crumbled feta cheese and adjust seasoning as needed.
  6. Chill for at least 20 minutes before serving.
