- 1/3 cup organic brown sugar

- 1/2 tsp cinnamon

- 1 1/2 cups all-purpose flour
- 1/3 cup organic brown sugar

- 1 stick Earth Balance® butter, cut into small pieces
- 1/3 cup boiling water
- 4 tsp organic sugar
- 1 1/2 tsp cinnamon
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine sliced peaches with brown sugar, sugar, corn starch, lemon juice, cinnamon, and nutmeg. Stir until all slices are coated.
- Transfer the peach mixture to an ungreased 9 x 13 baking dish and bake for 10 minutes.
- While baking, whisk together flour, sugars, baking powder, and salt in another bowl. Use a pastry blender to mix in the butter until crumbly.
- Add boiling water and stir gently until combined.
