  • 8 large fresh peaches, peeled, pitted, and sliced
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 cups all-purpose flour
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick Earth Balance® butter, cut into small pieces
  • 1/3 cup boiling water
  • 4 tsp organic sugar
  • 1 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine sliced peaches with brown sugar, sugar, corn starch, lemon juice, cinnamon, and nutmeg. Stir until all slices are coated.
  3. Transfer the peach mixture to an ungreased 9 x 13 baking dish and bake for 10 minutes.
  4. While baking, whisk together flour, sugars, baking powder, and salt in another bowl. Use a pastry blender to mix in the butter until crumbly.
  5. Add boiling water and stir gently until combined.
  6. Spoon the topping over the baked peaches evenly.
  7. Mix remaining sugar and cinnamon in a small bowl; sprinkle over the cobbler.
  8. Bake for about 35 minutes or until golden brown on top.
