Ingredients
- 2 large beefsteak or heirloom tomatoes

- 1 egg
- 1 cup panko breadcrumbs
- 1 cup oil (such as olive oil)
- 1 cup cooked corn
- 1/4 cup dairy-free cheese substitute
- 1/2 jalapeño (sliced)
- 3 tbsp diced red onion
- 2 tbsp chopped cilantro
Instructions
- Prepare the coating by mixing flour, smoked paprika, salt, and pepper in a plate. Whisk the egg in a bowl and set aside. Pour panko breadcrumbs onto another plate.
- Slice tomatoes into thick rounds. Coat each slice first in seasoned flour, then dip into egg mixture, followed by panko breadcrumbs. Place on a clean plate.
- For the corn salsa, combine cooked corn, dairy-free cheese substitute, jalapeño slices, diced red onion, cilantro, salt, and pepper in a mixing bowl and stir gently.
- Heat oil in a skillet over medium-high heat for about 30 seconds. Fry tomato slices until golden brown on both sides (approximately 1 minute each side). Remove and drain on paper towels.
