  • 2 large beefsteak or heirloom tomatoes
  • 1/4 cup all-purpose flour
  • 1/4 tsp smoked paprika
  • Pinch of salt and pepper
  • 1 egg
  • 1 cup panko breadcrumbs
  • 1 cup oil (such as olive oil)
  • 1 cup cooked corn
  • 1/4 cup dairy-free cheese substitute
  • 1/2 jalapeño (sliced)
  • 3 tbsp diced red onion
  • 2 tbsp chopped cilantro

Instructions

  1. Prepare the coating by mixing flour, smoked paprika, salt, and pepper in a plate. Whisk the egg in a bowl and set aside. Pour panko breadcrumbs onto another plate.
  2. Slice tomatoes into thick rounds. Coat each slice first in seasoned flour, then dip into egg mixture, followed by panko breadcrumbs. Place on a clean plate.
  3. For the corn salsa, combine cooked corn, dairy-free cheese substitute, jalapeño slices, diced red onion, cilantro, salt, and pepper in a mixing bowl and stir gently.
  4. Heat oil in a skillet over medium-high heat for about 30 seconds. Fry tomato slices until golden brown on both sides (approximately 1 minute each side). Remove and drain on paper towels.
  5. Serve warm with a generous spoonful of corn salsa on top.
