- 1 cup milk (more if needed)
- Salt & black pepper, to taste
- 10–12 medium shrimp, peeled & deveined
- 1 tbsp butter
- 1 tsp olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt & pepper, to taste
- 1 cup broccoli florets
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 tsp olive oil
- Pinch of salt & pepper
Instructions
- For the mashed potatoes, boil peeled and cubed potatoes until tender (12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
- In a skillet, heat olive oil over medium heat. Add broccoli and diced bell peppers; sauté for 4-5 minutes until tender yet vibrant.
- In another skillet, melt butter with olive oil over medium heat. Sauté minced garlic for 30 seconds, then add shrimp, paprika, salt, and pepper; cook for 2-3 minutes per side until pink.
- Serve by spooning mashed potatoes onto one side of the plate and arranging shrimp and vegetables on the other.
