Ingredients
- 1 large bulb of garlic
- 1.3kg (2.8lb) baking potatoes
- 5 tbsp (75g) butter
- 2 tbsp heavy cream
- 60g (3/4 cup) freshly grated Parmesan cheese
- 4 large egg yolks
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 180C (356F). Slice the garlic bulb's tip, drizzle with olive oil, wrap in foil, and roast for 50-60 minutes until soft. Allow it to cool, then squeeze out the cloves into a bowl and mash with a fork.
- Peel and dice the potatoes into large pieces, boil in salted water until fork-tender (about 15-20 minutes), then drain and let steam dry.
- In the pot, combine potatoes with butter, heavy cream, roasted garlic, Parmesan cheese, salt, and pepper. Mash until smooth; let cool slightly before mixing in egg yolks.
- Pipe the mixture onto a lined baking tray in swirled shapes. Drizzle with melted butter and bake at 200C (400F) for 15-20 minutes until golden brown.
- Garnish with parsley and serve warm.
