  • 1 medium potato, peeled and cubed
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 tsp olive oil or butter

  • Salt, pepper, paprika, Italian seasoning (to taste)

Instructions

  2. Season the salmon fillet with salt, pepper, paprika, and Italian seasoning. Heat olive oil in a skillet over medium heat and cook the salmon skin-side down for 4-5 minutes or until golden brown; flip and cook for another 2-3 minutes until done.
  3. Steam or roast baby carrots and broccoli until fork-tender (approximately 5-7 minutes) and toss with olive oil, salt, and optional chili flakes.
  4. Assemble by placing crispy potatoes on a plate alongside the vegetables and topped with the cooked salmon.
