  • 2 Garlic Clove
  • 1 Lime
  • 2 Boneless Skinless Chicken Thigh
  • 15 Fresh Ginger
  • 1 Red Chilli
  • 1 Curry Powder
  • 350 Water
  • 25 Fresh Coriander
  • 25 Fresh Mint
  • 0.5 Red Onion
  • 250 Microwave Rice
  • Olive Oil
  • Salt
  • Black Pepper

Instructions

  1. Marinate chicken with grated garlic, lime juice, and salt for at least 30 minutes.
  2. Slice remaining garlic, ginger, and red chilli.
  3. Heat olive oil in a frying pan; cook marinated chicken until charred and cooked through.
  4. In the same pan, sauté sliced ginger, garlic, and chilli until fragrant; stir in curry powder.
  5. Add water to make broth; simmer for 5 minutes and season with lime juice and salt.
  6. Prepare herb salad with coriander, mint, and red onion.
  7. Serve by placing rice in bowls, pouring broth over it, topping with sliced chicken and herbs.
