  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 1/2 cup unsalted butter (softened) for filling
  • 4 ounces cream cheese (brick style, full fat)
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract for filling
  • 1/4 teaspoon salt for filling
  • 1 tablespoon whipping cream (if needed)

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, whisk together flour, ginger powder, cinnamon, nutmeg, baking soda, and salt.
  2. In another bowl, beat softened butter with brown sugar and granulated sugar until smooth. Add molasses and egg, mixing until well combined.
  3. Gradually add dry ingredients to wet ingredients until fully incorporated. Fold in rolled oats.
  4. Scoop tablespoon-sized portions onto parchment-lined baking sheets and bake for about 9 minutes or until edges are lightly browned. Cool completely on wire racks.
  5. For the filling, beat softened butter and cream cheese together. Gradually mix in powdered sugar and vanilla extract until smooth.
  6. Once cookies are cool, spread or pipe filling onto one cookie and top with another to create a sandwich.
