  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt & pepper
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • 1 tsp fresh dill, chopped
  • Salt & pepper

Instructions

  1. Prepare the tzatziki dip by mixing Greek yogurt, grated cucumber (drained), minced garlic, lemon juice, fresh dill, salt, and pepper in a bowl. Chill until ready to serve.
  2. Coat chicken breasts with olive oil and season with smoked paprika, dried oregano, garlic powder, salt, and pepper. Grill or pan-fry over medium-high heat for about 6-7 minutes on each side until cooked through (internal temperature should reach 165°F/75°C). Slice into strips.
  3. Assemble salad bowls by layering chopped romaine lettuce, sliced cucumber, halved cherry tomatoes, thinly sliced red onion, grilled chicken strips, and a generous scoop of tzatziki dip.
