  • ⅓ cup extra-virgin olive oil
  • ¼ cup lemon juice
  • 4 garlic cloves (minced)
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  2. Place chicken thighs in a large mixing bowl and pour the marinade over them. Ensure each piece is well-coated, cover, and refrigerate for 1 to 2 hours (or up to 8 hours).
  3. Preheat your oven to 350°F (180°C). Transfer marinated chicken to a baking dish and pour any excess marinade over the top.
  4. Bake for 40 to 45 minutes until the chicken reaches an internal temperature of 175°F (80°C). For crispy skin, broil for the last few minutes if desired.
