  • 3 cups low-sodium chicken broth
  • 1 tablespoon dried oregano
  • 1 teaspoon dried dillweed
  • ⅓ cup olive oil
  • ½ cup brown onion, chopped
  • 3 garlic cloves, finely chopped
  • 2 tablespoons freshly squeezed lemon juice
  • Fresh parsley for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
  2. Heat olive oil in a saucepan over medium heat. Add chopped onions and garlic; sauté until soft and fragrant.
  3. Stir in oregano and dillweed, cooking for about 30 seconds to enhance flavors.
  4. Add the rinsed rice, stirring for one minute to toast it lightly.
  5. Pour in the chicken broth and add salt if desired. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed.
  6. Remove from heat; incorporate lemon juice and zest along with chopped parsley. Fluff with a fork.
  7. Let sit covered for an additional 5 minutes before serving.
