  • 1½ cups long grain white rice
  • 8 corn tortillas
  • pounds boneless, skinless chicken strips
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ medium lime (juiced)
  • 1 tablespoon chopped fresh cilantro
  • 1 pinch salt
  • 2 ears sweet corn
  • 1 medium avocado
  • ½ cup salsa
  • ½ cup sour cream
  • 1 medium red bell pepper
  • ½ medium red onion
  • 1 cup grape tomatoes
  • 2 medium jalapenos
  • 1 handful fresh cilantro

Instructions

  1. Rinse 1½ cups of long grain white rice under cold water until clear. In a pot or rice cooker, combine with 3 cups of water and cook until tender (about 18-20 minutes). Fluff with lime juice and cilantro.
  2. Preheat your grill or grill pan. Marinate 1½ pounds of chicken strips with olive oil and spices (salt, pepper, chili powder, garlic powder, oregano) for flavor. Grill for about 6-7 minutes on each side until fully cooked.
  3. Slice vegetables (avocado, bell pepper, red onion) while the chicken is grilling and cut corn off the cob.
  4. Assemble your bowls by placing rice as the base and layering grilled chicken and veggies on top. Finish with salsa and sour cream.
