  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1 pound cherry tomatoes
  • 6 ounces fresh mozzarella pearls
  • Fresh basil leaves

Instructions

  1. Marinate the chicken by mixing olive oil, balsamic vinegar, maple syrup, and sea salt in a glass container with the chicken. Refrigerate for at least 2 hours, ideally overnight.
  2. Preheat your grill to 400ºF.
  3. Combine cherry tomatoes and mozzarella pearls in a bowl with olive oil; add sliced basil.
  4. Grill the marinated chicken for 8-10 minutes on each side until cooked through (no pink inside).
