- 12 mini corn taco shells, warmed
- 1 large avocado, cored and sliced
- 1 small red or yellow onion, chopped
- 3 Tbsp chopped cilantro
- Lime wedges (for serving optional)
Instructions
- Marinate the chicken by mixing lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper in a resealable bag with the chicken. Refrigerate for at least 1 hour.
- Preheat grill to medium-high (425-450°F).
- Grill chicken for 5-6 minutes per side or until it reaches an internal temperature of 165°F.
- Rest the chicken for 5 minutes before dicing into cubes.
- Assemble tacos by adding diced chicken to warmed tortillas and topping with avocado slices, chopped onions, and cilantro.
