  • 1/2 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 cups mixed salad greens
  • 2 ripe peaches, sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup toasted walnuts or pecans (optional)

Instructions

  1. In a mixing bowl, whisk together Dijon mustard, honey, apple cider vinegar, olive oil, salt, and pepper until smooth.
  2. Place chicken breasts in a resealable bag or shallow dish and pour half of the marinade over them. Seal or cover and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat. Remove chicken from the marinade and discard any leftover marinade.
  4. Grill chicken for about 6-7 minutes per side until fully cooked (internal temperature should reach 165°F).
