- 1 medium avocado (diced)
- 4 ounces goat cheese (could swap for feta cheese)
- 1/3 cup roasted salted pistachios (roughly chopped)
- 1/2 cup olive oil (or avocado oil)
- 1/4 cup apple cider vinegar
- 2 1/2 tablespoons raw honey
- 1 1/2 tablespoons dijon mustard
- 1 teaspoon kosher salt
- 1/4 cup fresh chopped basil
Instructions
- Preheat the grill over medium-high heat. Brush peach wedges with olive oil and grill for about 3 minutes on each side until tender with grill marks.
