Ingredients
- 1.5 lbs salmon fillets (cut into 1-inch squares)
- 2 large lemons (thinly sliced)
- 2 Tbsp fresh parsley (chopped)
- 2–3 garlic cloves (pressed)
- 1/2 Tbsp Dijon mustard
- 1/2 tsp salt
- 1/8 tsp ground black pepper
- 2 Tbsp light olive oil
- 2 Tbsp fresh lemon juice
Instructions
- Soak bamboo skewers in water for at least 1 hour. Preheat the grill to medium heat (about 375°F).
- In a mixing bowl, combine chopped parsley, pressed garlic, Dijon mustard, salt, pepper, olive oil, and lemon juice. Mix well.
- Thread pieces of salmon and folded lemon slices onto double skewers for stability. Brush the marinade generously over both sides.
