  • 2 large onions (chopped)
  • 4 cloves garlic (minced)
  • 1 tbsp ginger (minced)
  • 2 Fuji apples (grated)
  • 2 carrots (chopped)
  • 6 cups chicken stock
  • 1 tsp soy sauce
  • 1 block Japanese curry mix
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 2 cups panko breadcrumbs
  • 6 boneless skinless chicken thighs (pounded to ½-inch thickness)
  • Cooked rice
  • Katsu sauce (homemade or store-bought)

Instructions

  1. Prepare vegetables by chopping onions, mincing garlic and ginger, grating apples, and chopping carrots.
  2. In a large skillet, heat neutral oil over medium heat. Sauté onions until soft, then add garlic and ginger; cook for another minute.
  3. Stir in grated apples and chopped carrots. Pour in chicken stock and soy sauce; bring to a boil.
  4. Mix in the Japanese curry block until dissolved; simmer for 15–20 minutes.
  5. Set up a dredging station with flour, beaten eggs, and panko breadcrumbs. Coat each chicken thigh first in flour, then egg, followed by panko.
  6. Fry the coated chicken thighs in hot oil until golden brown on both sides (about 4–5 minutes per side). Drain on paper towels.
  7. Serve by plating cooked rice topped with curry sauce and sliced fried chicken katsu.
