Instructions
- Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin tin with liners or grease it lightly.

- In a large bowl, combine the egg, honey, Greek yogurt, milk, melted coconut oil, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined—do not overmix.
- Gently fold in the diced peaches.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
